Beginner guide
Origins are starting stats, not jobs. There are nine of them. The Plain Doll in the Hunter’s Dream unlocks leveling after you first gain one Insight. Once unlocked, leveling remains available even if your Insight returns to zero. There is no difficulty setting.
The mistake I would correct on the first death is grinding echoes with zero Insight. The Doll is furniture until you see a boss or use a Madman’s Knowledge. After that, Vitality to the first soft cap matters more than a perfect origin. I am not crowning a best origin. A strength start likes the Saw Cleaver. A skill start can live with the Threaded Cane. Both are valid.
Soft caps
The stats page lists Vitality falling off from 30 and soft-capping at 50. Endurance soft-caps at 40. Strength and Skill fall off after 25 and soft-cap at 50. The hard cap is 99. These are community stat-table breakpoints, not a promise of identical gains for every weapon or a certification of the latest publisher update.
Three combat habits
Against a short swing, dodging toward and past the enemy can avoid the follow-up better than retreating straight back. A correctly timed firearm shot can interrupt susceptible attacks for a visceral; not every enemy or attack can be parried. Hit back promptly to rally recent damage. Fire and serrated attacks help against many early beasts, not every enemy. Keep enough stamina to disengage after a short punish.

What is the best origin?
There isn’t a single one. Match it to the weapon you want. Military Veteran and Violent Past are common strength-leaning starts. Professional leans skill. Waste of Skin is a blank slate with lower starting stats.
Why can’t I level up?
If you have never gained Insight, encounter a boss or use Madman’s Knowledge, then return to the Doll. After that first unlock, she can still level you at zero Insight. You also need enough Blood Echoes for the next level.
